LoanShark is a ledger for exactly that. Add a loan, get the full amortization schedule, log each payment with a receipt photo, and see one honest number for what's left. It also tracks the other direction — money people owe you, and the promises they made about paying it back. 

Everything is on-device. No account, no sign-up, no server: the whole thing works in airplane mode, because your debts are nobody else's data. Backups are a file you own and can restore anywhere.
